Mirin is the predominant flavour in the kaiseki art, the highest form of Japanese cuisine. It is traditionally brewed using labour-intense fermentation processes representing the history and culture of pre-industrial Japan. Without artificial additives or preservatives, Mirin has a sweet, flavourful taste and is an all-purpose seasoning. It heightens milder flavours at the same time providing balance to stronger tasting dishes. Perfect for seafood, Asian and Western cooking.
