What is the difference between Biltong & Jerky?

Jerky and biltong are both dried meat snacks, but they differ in preparation and texture. Jerky is typically marinated in spices and dehydrated or smoked, resulting in a thinner, typically chewier texture. Biltong (originating from South Africa) is marinated in vinegar, salt, and spices before being air-dried, giving it a thicker, often more tender texture with a tangy flavour. Biltong being air dried, also helps preserve more of the meats natural nutrients.
