Sorghum is an ancient grain originating in Northeast Africa and now cultivated worldwide. It contains no gluten, but does have a lot of dietary fibre and protein. The taste is best described as somewhat nutty, and when cooked as a wholegrain sorghum has a chewy, hearty texture that makes it great for couscous. Ceres Organics’ sorghum is organically grown in India and packaged in New Zealand. Cook with three parts liquid for one part sorghum, for about 45 minutes (shorter if pre-soaked).
