Fishermen from Sicily and southern Italy set out to sea in small boats to bring them ashore, after which they spend six months packed in hand-gathered Trapani sea salt before being carefully transferred to glass jars filled with Sicily’s fine, fruity olive oil. Always tender and tasty, never bony or coarse, these anchovies will satisfy wherever you use them.
