Harvested just before maturity, they stay soft, delicious and redolent with their characteristic aroma. You can cook these nutritious dried mushrooms as-is in soups and stews, or soak them in warm water to reconstitute them for other uses. If you soak them, be sure to save the liquid as it will make a tasty stock all by itself.
