Based on teff and rice flour, this mix makes it easy to make great gluten-free pancakes. You can make them vegan, too, because it works every bit as well with non-dairy milk and vegan egg replacements, and there’s no sugar added. But this is one case where what’s inside is just as important as what’s not: Teff is a supergrain among supergrains, with three times the calcium of quinoa, three times the iron of buckwheat, twice the fibre of brown rice, more magnesium than chia, and only a third as much fat as oats. These will almost certainly be the most nutritious pancakes you’ve ever had – and also some of the tastiest!
