Quinoa, the Ancient Superfood

Quinoa is an nutrient-rich superfood that contains high levels of protein, iron and fibre. It has a lovely fluffy consistency, with a slightly nutty and grain-like flavour. The best way to prepare Quinoa is to first rinse it well, then bring two cups of water to the boil and add one cup of Quinoa. Reduce the heat to low, and then allow to cook covered for 10 - 15 minutes or until tender but still slightly crunchy.
