Virgin coconut oil is extracted from fresh coconut meat instead of dried coconut meat. The term "virgin" means that the oil is unrefined and has not been processed using high heat. To make virgin coconut oil, the fresh coconut meat is grated and then pressed to extract the coconut milk. The coconut milk is then allowed to sit for a period of time, during which the oil separates from the water and solids. The oil is then carefully skimmed off the top.
