As Mai’s Australian husband, Ray, struggled to control his weight, she thought back to how her Japanese mother had done it: konjac. It’s an edible plant with few calories, virtually no carbohydrates, and lots of fibre – and its flour can be made into great-tasting pasta and faux rice. Mai started adding konjac to Ray’s diet, and after he rapidly lost 10, then 20 kilos, she started thinking that many other Australians would appreciate the benefits just as much. She soon founded Slendier, which now makes a complete line of delicious, low-calorie konjac pastas and rice substitutes.
