Freeze-Dried Strawberry & Pecan Bliss Balls

Satisfy your sweet tooth with these heavenly Freeze-Dried Strawberry & Pecan Bliss Balls. Made with strawberries that have been freeze-dried at their peak to retain all the vitamins, minerals, and fibre of the fresh fruit, these bliss balls have a rich strawberry flavour that intensifies over time and pairs perfectly with the creamy flavour of pecan nuts. And with just 7 ingredients that take less than 5 minutes to whip together, they're an easy treat to prep ahead and have on-hand as a healthier snack or dessert.  

MAKES 14 – 16 BLISS BALLS

  1. First, add all of the freeze-dried strawberries to a food processor and process on high until finely ground. Transfer the mix to a bowl and set aside. You will use half of the freeze-dried strawberry powder in the balls and then roll the balls in the other half of the powder at the end.
  2. Pit the medjool dates and add them to your food processor, processing until they reach a sticky paste consistency. This will take approximately 30 seconds to 1 minute depending on your food processor.
  3. Next, add the pecans to your date mix and process until the pecans are ground and mixed in well with the dates. You may need to scrape down the sides of the food processor to make sure they blend together evenly.
  4. To your date and pecan mix add the cacao powder, the quinoa flakes, the almond butter (or nut/seed butter of choice), and the maple syrup. Process these ingredients until they all come together in a sticky dough. Again, you may need to scrape down the sides of the food processor to make sure everything blends together evenly. You can pinch the mixture between your fingers to make sure it is the right consistency.
  5. Add one half the strawberry powder to the food processor and pulse a few times until it's mixed through evenly.
  6. Now you can roll your mixture into balls. Aim for about golf ball size balls (you should get approximately 14 – 16 bliss balls from this mixture). Set the balls aside on a plate while you prepare the dusting strawberry powder.
  7. Sprinkle the remaining strawberry powder onto a flat surface then roll each ball in the powder until coated evenly.
  8. Place the balls on a plate and into the fridge for at least 15 minutes to allow the mixture to set and the flavours to develop.
  9. Your Freeze-Dried Strawberry & Pecan Bliss Balls will keep in an airtight container in the fridge for approximately 5 days.

Note: The strawberry flavour will develop and intensify over time, so the further ahead you make your bliss balls the tastier they'll be!

These Freeze-Dried Strawberry Bliss Balls are perfect as a mid-morning or afternoon snack, packed into school lunches to ensure your littles are snacking healthy throughout the day (and enjoying their lunch too!), or crumbled into yoghurt or over coconut-ice cream for a healthy yet decadent-tasting dessert!
