Roll back to 2012 in sunny Sydney. A young café owner eyed her customers skipping on breads. They were all aboard the low carb / keto train, ditching bread, pasta, rice, and sneaky sugars. They weren’t just following a trend, but a sustainable healthy lifestyle with many success stories of transformed health, bodies, and vitality.
Still, the yearning for that occasional buttered toast or sandwich was real, and she wondered whether it was possible to bake a loaf minus the wheat, gluten, sugar, yeast, and typical flours that could rival a traditional loaf?
Voila! PBCo. ( formally 'The Protein Bread Co.') was born with a bread mix that ditched the heavy carbs but not the fluff and flavour. But why stop at bread when there were pancakes to flip, cookies to dunk, and cupcakes to devour?
