High in anti-inflammatory omega-3s, this sweet chia pudding takes advantage of fresh seasonal strawberries, and is perfect for a delicious breakfast, guilt free treat, or a perfect dessert to finish of a dinner party with friends.
Ingredients
- 1 x 400g Coconut Milk
- ¼ cup Coconut Sugar
- ¼ cup White Chia Seeds
- 1 x 250g strawberries
- 1 tbsp fresh Lime Juice
- 1 tsp organic vanilla extract
- ¼ cup packed mint leaves
- Loving Earth 85% Dark Chocolate, grated ( optional
Method
- Mix the coconut milk with the chia seeds, lime juice, sugar and vanilla.
- Spoon into glasses and fill ¾ full.
- Puree the strawberries and mint and pour this over the chia pudding.
- Chill for 4 hours or overnight to set.
- Serve with sliced strawberries or grated cacao bar for a more decadent treat.
