Strawberries and Cream Chia Pudding

High in anti-inflammatory omega-3s, this sweet chia pudding takes advantage of fresh seasonal strawberries, and is perfect for a delicious breakfast, guilt free treat, or a perfect dessert to finish of a dinner party with friends. 

Ingredients

Method 

  1. Mix the coconut milk with the chia seeds, lime juice, sugar and vanilla. 
  2. Spoon into glasses and fill ¾ full.
  3. Puree the strawberries and mint and pour this over the chia pudding. 
  4. Chill for 4 hours or overnight to set. 
  5. Serve with sliced strawberries or grated cacao bar for a more decadent treat.
