For a fun take on the most important meal of the day, indulge in our not-so-naughty, super nutritious, Berry Yummy Breakfast Pizza!
Ingredients
CRUST:
- 1 cup dates, pitted
- ¼ cup peanut butter
- ¼ cup almonds
- ¼ cup oats
- 2 tbsp maple syrup
- 2 tbsp coconut oil
TOPPINGS:
- Vanilla yogurt (or whipped coconut cream for a vegan-friendly pizza)
- Blueberry jam
- Chia seeds
- Blueberries
- Blackberries
Method
- Blend dates, peanut butter, almonds, oats, maple syrup, and coconut oil in a food processor to make the crust.
- On a baking tray lined with baking paper, press the crust 'dough' together to form a round disk.
- Place the crust in the freezer for a few hours (or even better, overnight).
- Once the crust is set, spread the vanilla yogurt (or whipped coconut cream) over the crust, then top with jam.
- Sprinkle with chia seeds and top with your favourite berries.
