Cosy up with this deliciously creamy spiced quinoa porridge on those chilly winter mornings, for a nourishing way to start the day.
Quinoa is an excellent alternative for oats, providing a unique nutty flavour and a good dose of protein and fibre as well as essential minerals, vitamins and antioxidants. It's gluten free, vegan friendly, and can be topped with just about anything, making it a versatile breakfast you can enjoy all winter long.
READY IN 25 MINUTES | SERVES 2
Ingredients
- ½ cup White Quinoa
- 1 cup Coconut Milk (more if needed)
- 1 banana, chopped
- ¼ cup Sultanas
- 1 tbsp Almond Butter
- ¼ cup Coconut Yogurt (or yogurt of choice)
- Ground Cinnamon (a good pinch)
- Ginger Powder (a good pinch)
Method
- Combine quinoa, coconut milk, sultanas, banana, and spices in a pot and simmer over a medium heat for around 15 minutes, or until the quinoa is cooked.
- Add more liquid if needed to reach your desired creamy consistency.
- Remove from the heat and stir through the almond butter, top with coconut yoghurt, and any other toppings of choice (warm berries or stewed fruit works well!). Serve hot.
