Fudge Brownies With White Chocolate Icing
Ingredients
Brownies
- 160g gluten free plain flour
- 1/3 cup coconut oil, melted
- 150g coconut sugar
- 2x blocks (160g) Loving Earth Mylk Chocolate, melted
- 1 tsp. Vanilla powder
- 200ml plant-based Mylk
- 2 flax eggs
White Chocolate Icing
- 1x block (160g) Loving Earth Organic White Chocolate, melted
- 1 tbsp. coconut oil
Method
- Preheat oven to 180 degrees Celsius. Line a square baking pan with baking paper.
- In a large mixing bowl, combine the flour and coconut sugar.
- To make the flax eggs, combine together ground flaxmeal with water at a 1:3 ratio.
- In a separate bowl, mix together the melted coconut oil, chocolate, vanilla powder, plant-based mylk, and flax eggs. Whisk together all the ingredients until fully combined and then add to the dry ingredients bowl.
- Making sure not to over-mix, stir until no lumps of flour remain.
- Pour the batter into the prepared pan and bake for 30 minutes or until a skewer is inserted into the middle of the brownie and it comes out clean. If it needs a little more baking, return to the oven for an extra 5 minutes.
- Remove from oven and cool in the baking dish for 5-10 minutes. Transfer to a cooling rack.
- While the brownie cools, make the White Chocolate Icing. Melt down the block of White Chocolate in a bowl, placed over a saucepan of simmering water making sure the bottom of the bowl doesn’t touch the water in the saucepan. Add a tablespoon of coconut oil and whisk until it’s all combined.
- Once the brownie has cooled slightly, pour the White Chocolate Icing all over the top.
- Slice the brownie into squares and enjoy!
