Nut-Free Lunchbox Muesli Bars

Easy lunchbox treats, no baking required. These nut-free muesli bars are the perfect homemade treat to include in your little one’s lunchbox.

With loads of fibre and protein inside and a decadent drizzle of chocolate on the outside, these are the kind of lunchbox treats that keep everyone happy. 

BONUS: Whip up a batch with your mini and turn lunchbox hassles into happy memories.

Ingredients

Method

  1. Add PeaNOT butter, coconut oil and maple syrup to a saucepan and warm over medium heat. Stir continuously until well combined. (Alternatively use a microwave proof bowl and microwave in 20 second intervals, stirring each time, until smooth.)
  2. Add all dry ingredients to a large bowl and toss to combine. Pour over wet ingredients and stir to combine. Add extra maple syrup to your preferred sweetness. If the mixture is too wet then add extra oats.
  3. Line a baking tin with baking paper. Spoon the muesli bar mixture in and press down with wet hands or a wooden spoon to flatten the bars.
  4. Pop in the fridge to let harden for two hours, or overnight.
  5. Slice bars into squares or rectangles and store in an airtight container in the fridge.
  6. Drizzle chocolate over muesli bars.
